Healing Collagen Mushroom Soup

We love this quick and easy mushroom soup – it gives the sumptuous taste of mushrooms with a helping of protein and age-defying collagen in a bowl.  Mushrooms are great for immunity, and the collagen does loads of things as you know, not least it helps heal the lining of your gut, also helping you to better digest your food.  

Another nice thing about this mushroom soup is it helps with weight management, high in antioxidants and are anti-inflammatory.  The addition of collagen is just utterly divine 

What you need

• 1 tablespoon of delicious grass fed butter

• 1/2 a cup of chopped onions

• 4 big cloves of minced garlic (must be fresh and minced)

• 2 big sprigs of thyme on the stem 

• 3 cups of mushrooms of your choice, just roughly chopped

• 1 cup Sally-Ann Creed vegetable stock  

• 1 cup of water

• 1/3 can of organic coconut milk 

• 2 heaped tablespoons of Sally-Ann Creed Pure Hydrolysed Collagen

• Himalayan salt and freshly cracked black pepper to taste

Let's cook

  1. Heat your butter in a large pot over medium heat and add onions, garlic and season well.
  2. Now add in the thyme from your garden, stir gently
  3. Add in the chopped mushroom ‘mixture’
  4. Let this simmer very gently now for around 5 minutes
  5. Add the stock and water, and cook for a further 20 minutes
  6. Pour into a blender and pulse until creamy and delicious and it calls to you
  7. Stir in the creamy coconut milk and collagen, and season further to your liking
