What you need for the collagen biscuits:
- ¼ (34g) Coconut Flour
- ¼ cup (20g) Pure Hydrolysed Collagen
- ¼ cup (34g) Arrowroot
- 1 teaspoon lemon zest
- ¼ (34g) Coconut Flour
- ¼ cup (20g) Pure Hydrolysed Collagen
- ¼ cup (34g) Arrowroot
- 1 teaspoon lemon zest
- 1/8th teaspoon Himalayan salt
- 1/8th teaspoon Bicarb
- 1 tablespoon Honey
- 2 tablespoons fresh lemon juice
- 3 tablespoons butter or coconut oil
- 1 egg
- 2 strawberries for popping on top
What you do next:
- Set the oven to 180C.
- Line a baking sheet with parchment paper
- Combine in a bowl the first 6 ingredients and whisk well
- Add the honey, lemon juice, butter and egg. Mix with an electric mixer for 20 seconds
- Place the dough on a baking sheet and shape it into a nice round shape
- Press the strawberries (cut in half) into the top of the dough
- Cut into four but don’t separate the pieces
- Bake for 20 minutes and when cool, eat and enjoy
