Slow Cooker Cauliflower & Leek Soup

This soup takes time, but it’s definitely worth it!

What you need

  • 1 large onion, sliced
  • 1 leek, sliced
  • 1 carrot, sliced
  • ½ a medium cauliflower roughly broken up
  • 2 medium courgettes cut into 4
  • 2 bay leaves
  • A pinch of Organic Cayenne Pepper
  • Pinch of Organic Turmeric
  • 4 big cloves of garlic, chopped
  • Grab a handful of fresh thyme from the herb box and remove the stalks
  • 2 generous tablespoons of my Vegan Chicken Stock Powder
  • 1 litre of water
  • Seasoning if necessary – taste it first

Let's cook

  1. Place all these ingredients into your slow cooker (or a large pot on the stove)
  2. Simmer on low heat for around 4 hours or until everything is soft
  3. Using your stick blender, blend it all until smooth.
  4. I love adding coconut cream to this and stirring it through – but it’s lovely on it’s own
  5. You can also leave out the cauliflower and use pumpkin or butternut
