Paleo Chia Pancakes

Packed with protein, fibre and goodness, this is a yummy alternative to brekkie.  To make it higher in protein, cut down a little of the coconut flour and replace it with Sally-Ann’s Pure Hydrolysed Collagen!

What you need

  • 3 green-tipped bananas (important for good health – must be green-tipped)
  • 1/3 cup coconut oil, melted
  • 2 eggs
  • 3 tablespoons Sally-Ann’s Chia Seeds
  • 1/3 cup Sally-Ann’s Organic Coconut Flour
  • 1 teaspoon Sally-Ann’s Ceylon Cinnamon
  • 1/2 teaspoon Sally-Ann’s Aluminium-Free Bicarb

Let's cook

  1. In a mixing bowl, begin by mashing the bananas
  2. Once mashed and slightly runny in texture mix in the melted coconut oil, eggs, and chia seeds,
  3. After all of these ingredients are well combined fold in the coconut flour, cinnamon, and bicarb.
  4. Cook the pancakes on in a hot flat pan until browned on each side (roughly 2 minutes each side) with melted butter.
