Add a nice glug of olive oil to a medium to large sized oven dish- (you want to cover the bottom of the dish) then put in the oven for about 10 minutes
Prepare the fish by seasoning with salt, pepper and chili flakes to taste
Remove the oven dish from the oven and add in your sliced garlic, thyme sprigs, fish, whole cherry tomatoes, olives, capers and jalapeños (You can either add in your chosen vegetables with the dish or cook them separately)
Bake for about 20 minutes or so, depending on the size of the fish.
Once the fish is just about cooked, put your oven on grill for a few minutes to crisp the top of the fish and char the vegetables a bit.
Serve with your choice of vegetables or low carb grain
