Delicious Banana Bread

My kids love bananas so we buy in bulk. It’s always difficult to gauge just how many we need in our house and sometimes they over ripen before they get eaten – I hate wasting food! which led me to become a big fan of banana bread. What’s more the banana peels are used too

What you need

  • 3 ripe bananas – mashed up
  • ⅓ cup coconut oil
  • 1 tsp baking soda
  • 1 ½ cups gluten free flour
  • ¼ teaspoon xanthan gum
  • ¾ cup Sally-Ann Creed Keto Sweet
  • Pinch salt
  • 2 large eggs beaten
  • 1 teaspoon vanilla extract

Let's cook

  1. Preheat the oven to 180’C
  2. Mash bananas to a consistency you would enjoy – smooth for a finer texture banana bread
  3. Beat the eggs and add the remaining ingredients
  4. Combine with the mashed bananas and stir until combined
  5. Grease a loaf pan or muffin trays and pour in the batter
  6. Bake for 50 minutes or until cooked through (check in on the muffins earlier if you are not using a loaf pan.
