Beauty Cookies

  • Serves: Makes about 15 cookies

  • Cook time: 8 - 10 minutes

What you need

  1. ¼ cup butter or organic coconut oil, softened*
  2. ¼ cup honey*
  3. 2 eggs
  4. The juice and zest of an organic lemon
  5. 1 teaspoon vanilla essence
  6. 1½ cups almond flour*
  7. ½ cup Pure Hydrolysed Collagen*
  8. 2 tablespoons coconut flour*
  9. ½ teaspoon bicarbonate of soda*
  10. A pinch of Himalayan salt*
  11. ½ cup sliced almonds*
  12. 3 tablespoons poppy seeds

Let's cook

  • Mix the first 5 wet ingredients together well in a big mixing bowl.
  • Mix the dry ingredients together separately – all the rest from #6-12 above
  • Now add the dry ingredients to the wet ingredients, and stir well.
  • Make little ball shapes and flatten onto baking paper on a baking tray
  • Bake at 180 degrees C for 8-10 minutes or until browning around the edges – test them to see when they are done
  • Cool and enjoy.
