• 3x Small brinjal (or two large)Â
• 2x diced onionsÂ
• 6x TomatosÂ
• 1 Punnet of mushrooms roughly choppedÂ
• 350g Baby marrows slicedÂ
• 4-6 cloves of garlic, minced or to tasteÂ
• 1 Red pepper choppedÂ
• 1 Green pepper choppedÂ
• 1 Yellow pepper choppedÂ
• Parmesan or feta to serveÂ
• Fresh oregano to tasteÂ
• Salt & pepper to tasteÂ
• Drizzle of balsamic glazeÂ

What you do:Â
1. Chop the brinjal and put in colander with salt while you prepare the rest of the ingredientsÂ
2. In a pot heat up olive oil and add in onions to brownÂ
3. Add in the brinjal and cook until slightly brownedÂ
4. Add garlic and mix inÂ
5. Add in all the peppers, baby marrow & tomato and freshly chopped oreganoÂ
6. Cook until soft and slightly caramelised (about 30 min) and add in a drizzle of balsamic glaze or balsamic vinegarÂ
7. Add in the roughly chopped mushrooms and cook for another 10-15 minÂ
8. If you would like to thicken the stew, add in the No Carb Thickener -sprinkle over & mix in
Serve warm with grated parmesan or crumbled feta and enjoy! Â
