Big Banting Loaf

This recipe ticks every box and is absolutely delicious. Keep in a sealed container. Great for freezing!

What you need

  • 6 eggs
  • 250ml buttermilk or double greek yoghurt
  • 1 packet of big banting loaf mix
  • Seeds to sprinkle on top.

Let's cook

  1. Preheat the oven to 180’C
  2. Beat eggs and buttermilk together in a bowl. Gently fold in the big banting mix until combined.
  3. Pour into a well-greased loaf tin and sprinkle seeds over the top.
  4. Bake for 55-60 minutes. Stick a knife into the middle and if it comes out clean its done.
  5. Enjoy warm with your favourite topping.
