(If you want to make sure the bones are extra clean, soak the bones in water and salt overnight)

Preheat your oven to 200°C

Place the bones, marrow side up into a baking tray lined with baking paper

Generously Salt the marrow bones

Finely chop up some of the rosemary and sprinkle over the marrow

Cut off both ends of the garlic cloves but don’t peel them

Toss the garlic in about +-1tsp olive oil

Scatter the garlic around the marrow bones

Roast for 25 minutes or until the marrow looks to be bubbling

Squeeze the garlic cloves out onto the marrow and eat with a spoon!
