This delicious salad contains wonderful fatty bacon, walnuts and refreshing pears. We love how quick and easy it is to prepare (and always sneak a rasher or 2 of bacon while we cook it). We know you’ll love it too.
What you need
1 cup Sally-Ann Creed® Walnuts
2 pears
6 streaks of bacon (or the whole pack if you wish)
150g gorgonzola
100g baby spinach
60g rocket
Dressing:
4 tbsp Sally-Ann Creed® olive oil
1 tbsp Sally-Ann Creed® honey
1 tbsp balsamic vinegar
Let's cook
In a dry frying pan, toast the walnuts until desired
In a salad bowl, add baby spinach and rocket. Toss to mix
Cook bacon until crispy, then take out and leave the fat/oil in the pan
Add sliced pears into the pan with the bacon fat and cook on each side until golden in colour
Chop up bacon and walnuts and sprinkle into bowl
Add grilled pear and sprinkle gorgonzola on top
Mix the olive oil, honey and balsamic vinegar and then pour over the salad
