What you do:
1. Chop the brinjal and put in colander with salt while you prepare the rest of the ingredients
2. In a pot heat up olive oil and add in onions to brown
3. Add in the brinjal and cook until slightly browned
4. Add garlic and mix in
5. Add in all the peppers, baby marrow & tomato and freshly chopped oregano
6. Cook until soft and slightly caramelised (about 30 min) and add in a drizzle of balsamic glaze or balsamic vinegar
7. Add in the roughly chopped mushrooms and cook for another 10-15 min
8. If you would like to thicken the stew, add in the No Carb Thickener -sprinkle over & mix in
Serve warm with grated parmesan or crumbled feta and enjoy!
