Ginger Pumpkin Soup

A stunning golden winter soup with warming ginger, lemongrass and rich coconut milk. 

What you need

  • 2 TBSP olive oil or coconut oil
  • 1 large onion- roughly chopped
  • 4 garlic cloves, minced
  • 800g pre-cut pumpkin or 1 butternut
  • 400ml unsweetened coconut milk or cream — 1 × 400 ml tin
  • +- 250ml water or chicken or vegetable stock  (or more as needed to cover pumpkin)
  • 20g fresh ginger, peeled and roughly chopped 
  • 1 tsp lemongrass paste 
  • 1 tsp chili flakes (or more to taste)
  • A generous crack of Himalayan salt and black pepper 
  • Fresh coriander, to serve
  • 2 tablespoons coconut cream swirl to serve (optional)

Let's Cook

  1. Heat 2 tablespoons of olive oil or coconut oil in a large pot over medium heat. Add 1 large, roughly chopped onion and 4 minced garlic cloves. Fry gently for 8–10 minutes until soft and golden — don't rush this step, it builds the flavour base.
  2. Add the fresh peeled and roughly chopped ginger, lemongrass paste, chili flakes (or more to taste) and a generous crack (or 1 pinch) of Himalayan salt and black pepper. Stir well and cook for 1 minute until fragrant.
  3. Add roughly chopped pumpkin and stir until coated in the spice and onion mixture. Pour in coconut milk or cream along with enough water, chicken or vegetable stock to just cover the pumpkin — add more liquid if needed. Bring to a boil then reduce to a simmer. Cook for 18–20 minutes until the pumpkin is completely tender when pierced with a fork.
  4. Remove from heat. Use a stick blender to blend until completely smooth and silky. Alternatively transfer in batches to a standing blender. Taste and adjust seasoning.
  5. Ladle soup into bowls. Top with fresh coriander and a swirl of 2 tablespoons coconut cream swirl to serve (optional). Serve immediately.
