Big Banting Loaf

This recipe ticks every box and is absolutely delicious. Keep in a sealed container. Great for freezing!

What you need

  • 4 eggs
  • 30 g baking powder
  • 250 ml buttermilk or double greek yoghurt
  • 1 packet of big banting loaf mix
  • Seeds to sprinkle on top.

Let's Cook

  1. Preheat your oven to 180°C 
  2. Empty the contents of the Big, Big Banting Loaf mix  into a large mixing bowl, add baking powder and mix well
  3. Beat together eggs and buttermilk in a separate bowl
  4. Fold eggs and buttermilk mixture into dry ingredients
  5. If yoghurt has been used, cover mixing bowl with a damp cloth and allow to rest for 45 minutes
  6. Pour mixture into a large, well-greased loaf tin and sprinkle seeds on top of mixture
  7. Bake for 55 - 60 minutes until a knife comes out clean
