We absolutely love this fresh, healthy salad! We often make it for a delicious snack during the day with our seed crackers.

What you need

The base

  • Half a cabbage, shredded and chopped 1 large cucumber, diced
  • 1/4 Cup Chives, chopped
  • 5 Spring onions

The dressing

  • 1 cup baby spinach
  • 1 cup basil
  • 2 cloves of garlic, minced
  • 1/2 a shallot
  • 2 lemons, juiced
  • 1/4 Sally-Ann Creed Pecan Nut Oil
  • 1 Avocado
  • 1/4 cup Sally-Ann Creed Walnuts
  • 2 Tbs Sally-Ann Creed Apple Cider Vinegar
  • Salt & Pepper to taste
  • Chilli to taste (optional)
  • Chives (optional)

Let's Cook

  1. Chop up all the base ingredients to your liking and put into a large bowl
  2. Add all of the dressing ingredients into a blender and blend until combined
  3. Pour the dressing mixture over the salad ingredients and mix up
