What you do with this:
- In a mixing bowl, begin by mashing the bananas
- Once mashed and slightly runny in texture mix in the melted coconut oil, eggs, and chia seeds,
- After all of these ingredients are well combined fold in the coconut flour, cinnamon, and bicarb.
- Cook the pancakes on in a hot flat pan until browned on each side (roughly 2 minutes each side) with melted butter.
Packed with protein, fibre and goodness, this is a yummy alternative to brekkie. To make it higher in protein, cut down a little of the coconut flour and replace it with Sally-Ann’s Pure Hydrolysed Collagen!
